This how I go with my horses, I mainly only deal with Appaloosas, so different breeds may be slightly different
How important is loyalty and certain DNA mods? I've found loyalty is important, but I don't use items to enhance it. When buying horses, I only buy three and under, so by the time they are jumping age, they have a pretty good loyalty. As for DNA mods, I think the Peggie DNA is useful, comparing my foundies with and without. All my others are almost all born with Peggie/ Super horse or fetlock feathers, and I don't see a big difference between them and if they have all of them or one of them, they seen to still all preform about the same.
What is a "good" jump? Minimum I'll use is 85" unless under special occasion, but most of mine are in the 88-90" range.
When should you start jumping a horse? I start them right when they are born, this will keep there loyalty up, but I don't push mine until they are 5-7.
What kind of feed? Mine are all one carrot juice
AS for training you need x5 horse jumps to have 100% training in a specific breed

I agree with century's posts. Breeds definitely differ, I only breed Canadian Warmbloods. I find lineage effects jumps slightly too, I bought foundations and they never performed over 81/82", their foals a bit higher, and their foals are jumping 85" now.
I don't jump mind until they are 3, I just personally find there isn't any gain foal jumping and they don't really jump too high young anyways.
Definitely carrot juice. Also signing them up to multiple registries is said to help, the higher star rating the registry has, the better.
Keep in mind when a horse is in jump offs it keeps their strength up, but when you breed the horse it knocks strength down. A lot of people hold off breeding during the horse's "prime" jump years to regulate their strength when they need it for optimum performance. =D
