1 - Co Training allows barns to 'work together' and get higher training levels :) So instead of Level 5 being the max, we can go all the way to 15 or 16! As of right now up til 4 is relatively easy to get, until 10ish is kind of harder, and 11+ is pretty difficult in the long run. Horses improve at their own rates.
The Co-Training update is not wholly complete, the final bit of it has been pushed back due to glitches that needed to be addressed before release. After that is released it will require a Co-Training item to co-train horses.
2 - A bit of both! TB wise there are a lot of the same lines right now and they are super popular. So personally if I was still doing TB's I would be looking for either older, DNA bred lines or basically non-popular lines for some variety.
3 - Yep Sunday & Thursday!
4 - Vaccine's can remove PEV. PEV occurs when you breed a horse with low strength, so if you just don't overbreed and/or use leg wraps its not too much of an issue :)
Training starts at age 2 now as well :) I have some 3 year olds sitting in my barn if you are interested, older than what you are looking for but they just started training and are ready to go :)

Also to answer one of your questions horses tend to peak around 11-14 years old from my own personal observations. They still preform well from the 9-16 range but I see the most improvement of my own horses and others around 11-14
And foaling days are Thursday/ Sunday you remembered correctly

Also- with Co-Training, if I'm level 5 for a particular breed, am I automatically in the co-training list, or is there a place I need to sign up...?

Ok so your automatically training that breed for that level, on the horse click to co train and then down by like where it shows dna it'll have a clickable link/option for co-training and that will allow you to add more trainers as well :) The higher a person can train the more potential your horse has.
